What should you look for in a bar fridge?

Measure first, then narrow by cooling type, then by door. Those three decisions eliminate most of the market before you have looked at a single price.

External dimensions, not just capacity. Height is the number that kills purchases. A standard Australian benchtop sits at about 900 mm, so an under bench cavity is usually somewhere between 820 and 870 mm of usable height once you account for the plinth and the benchtop thickness. Depth matters just as much: measure front to back including the door swing, and remember the hinge needs somewhere to go.

Compressor cooling, not thermoelectric. This is the biggest quality divide in the category. A compressor fridge holds its set temperature regardless of how hot the room gets. A thermoelectric or Peltier unit can only pull the inside a fixed number of degrees below ambient, so in a 38 degree garage it sits at a useless temperature no matter what the dial says. How do you look after a bar fridge?

Defrost on a schedule. Manual and semi automatic models build ice on the back wall, and ice is an insulator, so a heavily iced fridge works harder and holds temperature worse. Once or twice a year, empty it, switch it off, and leave the door open with a towel underneath.
